IGT Rosato Rivale - Casanuova delle Cerbaie
GRAPES: Sangiovese Grosso
Altitude: 250-350 m a.s.l.
Vineyards: 11ha divided in two parts, both cultivated using the bilateral cordon cultivation system
Soil: mixed clay, very rich in skeleton
Harvest: manual harvest in perforated crates, mid to end of September, with sorting table selection
Fermentation: the bled juice ferments in a 600 liter oak barrel so the temperature of fermentation does not exceed 18-20°C. This fermentation is done spontaneously by the yeasts naturally present on the grapes and in the cellar.
Ageing: in the same 600L barrels until bottling in spring.
Refining: short bottle refinement before market release
Color: pale raspberry
Nose: sweet strawberry fruit aromas with hints of orange, complex and long flavor profile with a saline and mineral touch.
The Rivale Rosé is the latest addition to the winery’s assortment, a wine of limited production obtained by bleeding the Sangiovese Grosso from their “Cru” vineyard of Montosoli, the same grapes destined to become Brunello Riserva. After just a few hours of maceration, 15-20% of the juice is removed to continue the vinification away from the skins. The wine has a light color and consistent body, notable fruit and shows the very Montosoli: a unique, salty mineral character.
